Kurosawa - Junmai Kimoto Sake - Kimoto method Sakes use an even more labor intensive process than Yamahai, and are very rare these days. All that work pays off in rich, umami laden, complex flavors not found in any other Sakes. Full-bodied and earthy, yet smooth. Kurosawa has a taste profile that almost everyone can understand and appreciate. Very flexible in serving temperature and food pairing. Not all premium sake can be drunk both chilled and hot, but Kurosawa is one of the exceptions and is often enjoyed warm by sake experts and connoisseurs. Warming this sake will smooth out its strong characteristics. On the other hand, drinking this sake chilled is the best way to bring out its brighter side.
