Winemaker Notes
This 7th generation family owned brewery was founded in 1843 and still practices the traditional "farm to table" method of sake making, where the brewers (including thetoji -head brewmaster) brew their sake during the winter months and tend their rice fields in the summer. All of Kirin-zan's rice is sourced from their own fields or other local growers within 10km of the brewery. Like most Niigata sakes, Kirin-zan is light, crisp and dry, but the many subtle notes that lie underneath the initial impressions set Kirin-zan above most of their excellent Niigata contemporaries. Beautifully packaged, it is clean, smooth, and balanced with a light to medium body and great concentration. It exhibits flavors of citrus, peach, mineral, pineapple, and green tea. The finish is soft and long.
